Crockpot Beef Tips With Zip and for Dessert Try Banana Split Cake Suitable for Diabetics

For the busy family on the go, or just the cook with little time for making nutrious meals, Beef Tips with Zip are perfect for you.  Bring out the crockpot or slowcooker and take full advantage of its benefits.  This recipe is easy to toss into the crockpot in the morning and ready when you get home.  The surprise “zip” ingredient adds a surprising flavor as well as tenderizes the meat.  Everyone will want to know why your beef tips are different than the ones they’ve had in the past!  Serve over brown rice or no-yolk egg noodles.  Add a salad, then finish off the meal with our Banana-Split cake that is diabetic friendly. 

BEEF TIPS WITH ZIP!

2 lbs beef stew meat

2 cups fresh mushrooms, sliced

1 can low-fat cream of mushroom soup, undiluted

1 envelope dry onion soup mix

1 cup sugar-free lemon-lime soda

Turn slow-cooker on low.  Place meat and mushrooms in cooker.  In a mixing bowl, combine remaining ingredients until well blended and pour over meat and mushrooms.  Put cover on slow cooker and cook on low approximately 8 hours.

Serve over brown rice or no-yolk egg noodles.

Note:  Without the rice or noodles, there are almost 3 times as many proteins as carbs.  This allows you to have the rice or noodles.  Serve with a salad that has kidney beans or garbonza beans added.

BANANA SPLIT CAKE

Crust:  2 cups graham cracker crumbs

1 stick unsalted butter, melted

Filling:  3 small pkgs sugar-free instant vanilla pudding mix

3 cans fat-free evaporated milk

Topping:  2 medium bananas, sliced

1 large can crushed pineapple in its own juice

1 carton sugar-free whipped topping

3 tbsp chopped walnuts or pecans

3 tbsp sugar-free chocolate syrup (I recommend Russel Stover brand)

Mix pudding and milk together until thickened.  Chill in the refrigerator while making the crust.  To make crust, mix graham crackers and butter together and press onto the bottom of a 9 x 13-inch pan.  Remove filling from refrigerator and spread over top of crust.  Add topping ingredients one at a time in the order listed.  Refrigerate until serving time.  If you really want to dress up your cake and you aren’t concerned about the little extra bit of sugar, top each piece with a maraschino cherry before serving.

Lemon Sponge – Zingy and Fresh Lemon Sponge Cake

This is a simple lemon sponge cake which is light, lemony and delicious, and is easy to prepare and cook. Anyone with a sweet tooth will enjoy the clean and fresh flavour of this sumptuous recipe, and it is always a good idea to make more than you think you need as it seems to disappear rather quickly!

The lemon sponge cake is best done as a tray bake but it works just as well when made as fairy cakes.

You will need a 12″x8″x1.5″ baking tin which needs to be greased and lined with baking parchment.

Preheat your oven to 190c/170c for fan assisted oven/gas mark 5

Ingredients

8oz/225g Unsalted butter cut into small pieces and at room temperature

8oz/225g Golden caster sugar

8oz/225g Self raising flour sifted

3 Medium eggs at room temperature

5fl oz/150ml milk

1 1/2 teaspoons baking powder, sifted

Finely grated zest and juice of two un-waxed lemons

4oz/110g Golden Granulated sugar

How to make the Lemon Sponge Cake

1. Put the butter and caster sugar in a bowl or mixer and cream together until light and fluffy.

2. One at a time put in the eggs and mix well, make sure you scrap down the sides of the bowl.

3. Add the milk whilst still stirring and beat to a creamy consistency.

4. Now add the flour and baking powder, continuing to whisk all the time.

5. Add the lemon zest only and mix well.

6. Pour the mixture into the prepared tin, smooth over the surface and put in the middle of the oven.

7. Bake the lemon sponge cake for 30 minutes until the top is golden and the sides just shrinking away from the sides of the tin, use a clean skewer to test the centre of the cake and make sure it comes out clean.

8. Remove from oven when done and leave for 10 minutes now use the skewer and prick the cake all over as the next part is really yummy.

9. Mix the granulated sugar and the lemon juice together in a bowl and stir until the sugar has almost dissolved.

10. Spoon over the cake evenly and now leave to cool completely and allow the lemon juice and sugar to soak into the cake.

Top tip

If you would like to make this lemon sponge in the form of fairy cakes , simply bake per the instructions above but bake it for 15-18 minutes, checking occasionally.

Lemon sponge cake serving suggestion

Serve the sponge with lemon sauce or vanilla custard or just with a hot cup of Darjeeling or Ceylon tea, put your feet up and enjoy.

For a Lighter Vanilla Cake That Doesn’t Taste Light, Make This Lite Vanilla Cake

Love desserts but don’t want to consume so much fat and sugar? Then we have the recipe for you! This two layer Vanilla Cake is lightened but doesn’t lose any of the taste! No one will ever know you are serving a “lite” cake unless you tell them!  Replacing butter with sugar-free applesauce and whole eggs with egg whites makes the difference.  But the difference is taste is so small you won’t even notice.  This makes a great cake for birthdays and other special occasions.  Also great for cupcakes.

LITE VANILLA CAKE
1/4 cup unsweetened applesauce
1/4 cup shortening
1 1/2 cups sugar*
4 egg whites
1 1/2 tsp vanilla extract
2 1/4 cups cake flour, sifted
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup low-fat buttermilk
nonstick cooking spray

Preheat oven to 350 degrees. Spray two 9-inch round cake pans with nonstick cooking spray and sprinkle with flour; set aside.

In a large mixer bowl cream the shortening and sugar until crumbly, approximately 2 minutes. Add the egg whites, one at a time, beating well after each addition. Beat in the applesauce and the vanilla extract.

In a separate bowl, combine the cake flour, baking powder, baking soda, and salt. Add flour mixture to the batter alternately with the buttermilk until well combined. Pour the batter evenly into the two prepared pans. Bake at 350 degrees for 20 to 25 minutes or until a wooden toothpick inserted in the center comes out clean. Remove from oven and cool in pans for 10 minutes before removing to wire racks to finish cooling completely.

FROSTING:

3 cups powdered sugar
1/4 cup butter or margarine, softened
1 tbsp light corn syrup
2 tsp vanilla extract
dash of salt
2 to 3 tbsp lowfat milk

Beat the powdered sugar, butter or margarine, corn syrup, vanilla and salt together adding enough milk to reach spreading consistency.

Place one layer on cake plate. Spread frosting over the top, add the second layer. Frost top and sides of cake.

*You can reduce the sugar further by using Splenda Sugar Blend.

Gluten Free Pear and Almond Cake – A Delicious and Easy Gluten, Dairy and Grain Free Recipe

People following a gluten free diet often lament the absence of desserts, especially cakes. Here is a simple recipe that is not only gluten-free but dairy free as well.

Pears and almonds have a natural affinity for one another making them the perfect flavor combination for a gluten free cake. Pears are high in fiber, sodium, fat, and cholesterol free and an excellent of vitamin C which means eating this delicious cake is actually good for you!

The pears in this recipe are chopped, cooked briefly in the microwave and pureed with a fork to make a sort of pear sauce. The pear sauce adds not only flavor but gives this cake a rich, buttery texture which is surprising considering the total lack of butter or butter substitutes.

The use of almond flour makes this cake not only gluten free but grain free as well. Many people have discovered the advantages of a grain free diet in healing the small intestine after discovering they have Celiac Disease or gluten intolerance. The use of almond flour instead of wheat flour also makes this a particularly good cake for Passover.

Whether you follow a gluten free diet or not, the one thing that everyone agrees with is that this cake is absolutely delicious!

Pear Almond Cake

Ingredients

4 ripe but firm Pears- use divided

1¾ cups plus 2 teaspoons granulated sugar – use divided

1 tablespoon freshly squeezed lemon juice

3¼ cups finely ground blanched almond meal

8 large eggs

1¼ teaspoons pure vanilla extract – use divided

1 tablespoon agave nectar or honey

1 tablespoon grapeseed (or other neutral tasting) oil

½ cup sliced almonds

Directions

Preheat the oven to 350 degrees. Lightly spray a 9 or 10 inch springform panwith gluten-free non-stick cooking spray. Cut a circle of parchment to fit the bottom of the pan, place in the pan and spray it lightly with more cooking spray.

Peel and core the pears. Chop three of the pears roughly and slice the fourth into about ¼ inch slices. Take the chopped pears and put in a small, microwavable bowl with the lemon juice and 2 teaspoons of sugar. Cover and microwave on high power for 4 minutes. (Alternatively you can cook on the stove for 10 minutes over medium heat in a covered saucepan.) Mash the pears into a coarse puree with a fork or wooden spoon. Let cool.

Put the almond meal and 1¾ cups of sugar in a food processorand give it 4 or 5 long pulses. Add the eggs, 1 teaspoon of vanilla extract and the cooked pears and puree the mixture. Pour into the prepared pan.

In a small skillet, heat the agave or honey with the oil, stirring to mix until the mixture starts to bubble. Take off the heat and stir in the remaining ¼ teaspoon of vanilla. Add the pear slices and toss gently to coat.

Sprinkle the sliced almonds over the top of the cake. Add the pear slices in a spoke configuration and spoon the agave or honey/oil mixture over the top of the cake.

Bake for 45 – 55 minutes or until the cake is nicely browned and a toothpick inserted into the center comes out clean. Check the cake after about 35 minutes, if it browning too much, place a piece of foil over the top.

Let the cake cool in the pan for about 30 minutes then remove the sides of the pan and transfer to a serving platter (removing the parchment is optional but recommended). The cake is best served slightly warm.

Makes 12 slices.

Old Fashion Recipe For Shirley’S Bavarian Beef Stew And Sour Cream Devil’S Food Cake

Come in from the cold and warm yourself from the inside out with this delicious recipe for Shirley\’s Bavarian Beef Stew. Ginger snaps, red cabbage and caraway seed lend the Bavarian flavor to this beef stew. For dessert try this recipe for Sour Cream Devil\’s Food Cake.

SHIRLEY\’S BAVARIAN BEEF STEW

This is an old Iowa recipe.

2 lbs beef stew meat, cubed
2 medium onions, sliced
3 tbsps shortening
1 1/2 cups water
2 tsps salt
1/2 tsp black pepper
1 bay leaf
1 1/2 tsps caraway seed
1/4 cup vinegar
1 medium head red cabbage, cut into wedges
1/2 cup ginger snaps
1/2 cup warm water

Heat the shortening in a pressure cooker; brown the beef and onions. Add the 1 1/2 cups water, salt, salt, pepper, bay leaf, and caraway seeds. Cover and cook at 10 pounds pressure for 15 minutes. Cool and add vinegar and place cabbage wedges on top of the meat. Cover and cook at 15 pounds pressure for 5 minutes. Meanwhile, soak the ginger snaps in the warm water. Remove the cabbage and meat to a heated platter. Add ginger snaps to the liquid and bring to a boil, stirring to make a smooth gravy.

SOUR CREAM DEVIL\’S FOOD CAKE

This recipe is from an old Church of Christ recipe book. I have no idea of the city or state. The recipe was submitted by H. Marshall.

1/2 cup cocoa powder–fill with boiling water to make 1 cup
1 cup sugar
2 eggs
1 tbsp lard or shortening
1 cup sour cream
1 tsp soda
1 tsp baking powder
2 cups flour

Preheat oven to 350 degrees.

Mix cocoa and boiling water together and set aside. Mix remaining ingredients well then add to the cocoa and water. Mix well, pour into greased and floured 9×13-inch pan and bake at 350 degrees for 30-35 minutes or until done.

Very Tasty “Mud” Recipes – Luby’S Mississippi Mud Cake And Mud Hens

Remember the fun of making mud pies when you were a child?  I remember my daughter making them for my grandfather and how he dutifully sat under a shade tree for hours telling her how good they were.  But, now that we are all grown-up, it is time to get into the chocolate and make some very tasty adult “Mud” desserts.  Our first recipe is from a popular cafeteria chain here in Texas called Luby’s Cafeterias.  They serve a popular Mississippi Mud Cake and shared this recipe with us.  The second recipe is for Mud Hens; they may not sound very good but you can rest assured they are.

LUBY’S MISSISSIPPI MUD CAKE

Cake:

2 sticks butter or margarine, softened

2 cups granulated sugar

1/3 cup unsweetened cocoa

4 extra-large eggs

1 3/4 cups all-purpose flour

1 cup chopped pecans

1 tsp vanilla

Icing:

1 stick butter or margarine

1 3/4 cups sifted powdered sugar

2 cups miniature marshmallows

2 tbsp + 2 1/2 tsp unsweetened cocoa powder

1/4 cup milk

1/2 cup pecan pieces

Preheat oven to 350 degrees.  Grease and lightly flour a 9 x 13-inch baking pan.

For cake:  In a large bowl, beat together the butter, sugar, and cocoa until smooth and creamy.  Add the eggs, one at a time, beating well after each addition.  Add the flour, pecans, and vanilla to the mixture.  Mix just until blended and pour the batter into the prepared pan.  Bake at 350 degrees for 30 to 35 minutes or until a wooden toothpick inserted in the center comes out clean.  Set pan on a wire rack to cool.

For icing:  Combine butter, powdered sugar, marshmallows, cocoa powder, and milk in a medium saucepan.  Cook over medium heat just until the marshmallows are melted, stirring almost constantly. Drizzle over cake, sprinkle with pecans and cool completely.  Garnish each piece with a dollop of whipped cream and a maraschino cherry, if desired.

MUD HENS

1/2 cup butter

1 cup sugar

3 egg yolks

1 egg white, reserving 2 egg whites

1 1/2 cups flour

1 tsp baking powder

1 tsp vanilla

1/2 tsp salt

1 cup chopped nuts

1 cup brown sugar

Preheat oven to 350 degrees.

Mix butter, sugar, egg yolks, 1 egg white, flour, baking powder, vanilla, and salt together.  Spread very thinly in a greased 9 x 13-inch baking pan.  Sprinkle with nuts.  Beat the two remaining egg whites until stiff and beat in the brown sugar.  Spread over the nuts.  Bake for 30 minutes.  Cut into 24 squares while still hot.
